Ayurvedic Spring Pasta


Prep Time : 20 minutes

Cook time : 5 minutes Medium heat

Serve : 2

 

Ingredients:

o   Pasta boiled 1 cup

o   2 teaspoon grapeseed or olive oil

o   Cumin seeds 1 teaspoon

  • Coriander Powder 1 teaspoon
  • Turmeric powder 1.2 teaspoon

 

 

o   Curry leaves 5-7

o   Green chillies chopped 1 (Optional)

o   Shredded coconut 1 tablespoon

o   Coconut milk 1/4 cup

o   Blenched Almonds roasted 2 teaspoon

o   Salt to taste

o   Fresh coriander leaves chopped 1 tablespoons

o   Lime Juice

 

Method

Heat oil in a non-stick wok, add cumin seeds, coriander powder, turmeric powder and saute till the colour changes.

Add curry leaves and green chilli and sauté for 5 seconds.

Add pasta, scraped coconut and mix well. Add coconut milk, almonds and salt and mix well

Add coriander leaves and lime juice and toss.

Transfer into a serving bowl and serve hot.

Garnish it with shredded coconut and chopped coriander on the top.
